Bees creating bee pollen is a truly artistic process. When bees land on flowers they scarp off its microscopic pollens by moistening them with honey and saliva. These tiny granules get stranded on their hairy bodies which are push down by the bees into their pollen baskets as they fly back to the hive. These pollens accumulate as tiny balls or pellets called as bee pollen. They are source of nutrition for the bees and also for us.
Just like honey, chemical properties of bee pollen depend upon the flower it has been harvested from. But generally, bee pollens are up to 40% of sugars, around 40% proteins and some amount of fat and other constituents. Bee pollens are said to undergo some fermentation process due to enzymes present in honey and bee saliva. It is this fermentation that imparts it the health benefits.
