Gajak is a dish prepared as a celebration of Makar Sankranti. Roasted sesame seeds and cashew-nuts or groundnuts are folded in a mixture of ghee, sugar, and water and then laid on a ghee coated tray. On cooling down, this layer of sesame seeds is then broken into small pieces and served as a sweet dish. So instead of Sugar we will use honey to make Gajak
Ingredients of Gajak 4 Serving:
2 cup roasted sesame seeds | Four Table Spoon of Honey | 2 tablespoon water | 1/4 cup halved cashews | 2 tablespoon ghee
How to make Gajak with Honey
Step 1
To make this easy Makar Sankranti recipe, grease a rectangular tray with ghee and keep aside. In a large heavy bottomed kadhai, dry roast sesame seeds on low heat till they turn brown. Keep aside.
Step 2
Now combine ghee with two tablespoons of water, and cook on medium heat till it turns thick and syrupy. Take off from the heat and fold in the roasted sesame seeds and cashew nuts. Mix well with four table spoon of honey and then transfer to the ghee coated tray and level it with a large flat spatula.
Step 3
While still hot/warm, make cuts on it. Once it has cooled down, you can separate the pieces. Serve or store them in an air-tight container once properly cooled.
